Strawberry Chocolate Coffee Cake

Last weekend my husband and I rode our bikes to the Farmer’s Market. We live right on the edge or our small town’s downtown area. We love getting out and riding bikes anytime we have beautiful weather. On Saturdays we like stopping by the Farmer’s Market. There is a local family that has a meat and produce tent that we love to support. We went towards the end of the market this time and they were ready to make a deal, so they didn’t have to take the produce home. That meant we ended up with about 4 pounds of strawberries for $8! It was too good of a deal to pass up, but it also meant we had to figure out what to do with all the strawberries.

My husband’s suggestion was to make a strawberry pie, but I needed gelatin to do that, which I didn’t have on hand so that was out. I settled on making a Strawberry Coffee cake and it was delicious!

It’s really easy to make, doesn’t involve a ton of ingredients, and most likely you already have most of them on hand. Those are my favorite kind of recipes!

Your fist step is to preheat the over to 375 degrees.

You first mix all the dry ingredients (flour, sugar, baking powder, salt) together in one bowl.

Second step is to mix all the wet ingredients (egg, milk, butter) together in a second bowl.

Next up is to mix the two bowls together and stir just until moistened. Fold 1 cup of chopped strawberries into the mixture. Once mixed pour mixture into a greased 8-inch square baking dish.

Once in the pan layer the remaining 1 1/2 cups of sliced strawberries on top, then sprinkle the 1/3 cup chocolate chips (I used dark chocolate because it’s my favorite) into the strawberry layer.

The last step is to make the crumbled topping for your cake. To do this you combine the flour and sugar into a bowl, then add in cold butter. I used a hand mixer and just pulsed to cut in the butter until mixture becomes the consistency of coarse crumbs.

Layer on top of strawberries and bake for 30-35 minutes or until wooden pick comes out clean.

Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Sugar
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1 Egg, beaten
  • 1/2 cup Milk
  • 1 tsp Vanilla
  • 2 tbsp Butter
  • 2 1/2 cups Fresh strawberries (sliced)
  • 1/3 cup Chocolate chips

Topping

  • 1/2 cup All-purpose flour
  • 1/2 cup Sugar
  • 1/4 cup Cold butter

Instructions

  1. Mix flour, sugar, baking powder, and salt together in mixing bowl.

  2. In separate bowl mix egg, mild, and butter together.

  3. Combine two bowls together and stir just until moistened. Fold in 1 cup of sliced strawberries. 

  4. Pour mixture into a greased 8-inch square baking dish. 

  5. Place remaining strawberries evenly over the top of batter. 

  6. Sprinkle chocolate chips into strawberry layers. 

To make topping:

  1. Combine flour and sugar in a bowl. 

  2. Add  butter and with hand mixer pulse mixture until it is the consistency of coarse crumbs. 

  3. Sprinkle mixture evenly over the strawberries

  4. Bake at 375 for 30-35 minutes, or until toothpick comes out clean. 

  5. ENJOY!

A few notes: I used whole wheat flour because that is what I had on hand. It was still delicious, but will taste a little dryer then using regular white flour.
